What Makes a Cuisine One of the Best in the World?
Of course, taste is personal. Every food lover has favorite dishes, ingredients and culinary traditions.
Instead of treating any ranking as an absolute verdict, this series considers several factors that help explain why certain cuisines have achieved extraordinary international recognition: the diversity of their dishes, culinary heritage, worldwide influence, distinctive ingredients and the complexity and balance of their flavors.
We'll explore long-established culinary traditions such as those of Italy, Japan and Greece, while also discovering cuisines that have gained increasing international attention, including those of Peru and Indonesia.
Think of it as a journey through some of the world's most fascinating food cultures — combining legendary classics with exciting discoveries.
1. Italy – A Celebration of Simplicity and Flavor
Italian cuisine is undoubtedly one of the world's most recognizable and widely loved culinary traditions.
Its strength lies partly in its apparent simplicity. Fresh pasta, ripe tomatoes, fragrant herbs, excellent olive oil, carefully aged cheeses and high-quality regional ingredients are transformed into dishes that have traveled far beyond Italy's borders.
But there isn't really just one Italian cuisine. Travel through the country and you'll discover striking differences between regions, cities and even individual families.
Naples: The Home of Legendary Pizza
In Naples, pizza is much more than fast food — it is part of the city's identity.
The quality of ingredients such as tomatoes and mozzarella, combined with carefully prepared dough and intense heat, creates the distinctive Neapolitan pizza that has inspired pizza makers around the world.
A beautifully prepared pizza demonstrates one of the central principles of Italian cooking: you don't necessarily need dozens of ingredients when a few excellent ones can work together perfectly.
Bologna: Pasta, Ragù and Family Tradition
Bologna offers another side of Italian gastronomy.
Among its celebrated specialties are tagliatelle al ragù, traditional mortadella and tortellini in brodo — small stuffed pasta traditionally served in broth.
These comforting dishes reflect the family-centered character of Italian cooking, where recipes and techniques have often been passed from one generation to another.
From Tuscany to Sicily
In Tuscany, rustic cooking celebrates meat, vegetables, beans, bread and seasonal ingredients.
Traditional dishes include ribollita, a hearty Tuscan soup, as well as preparations featuring wild boar and other regional ingredients.
Continue south to Sicily and the flavors change again.
Palermo's markets introduce travelers to specialties such as arancini, fried rice balls with savory fillings, pane con la milza, and caponata, the famous sweet-and-sour Sicilian eggplant dish traditionally prepared with ingredients such as tomatoes, olives, capers and vinegar.
Sicilian cuisine reflects centuries of Mediterranean cultural exchange, producing a fascinating combination of savory, sweet, sour and aromatic flavors.
Cheese, Seafood and Irresistible Italian Desserts
Italian gastronomy also benefits from an extraordinary variety of seafood and internationally celebrated cheeses.
Parmigiano Reggiano, Pecorino and mozzarella are just a few examples of products that have become essential ingredients far beyond Italy.
Then there are the desserts.
Tiramisu, Sicilian cannoli and authentic Italian gelato provide the perfect ending to a culinary journey through the country.
From handmade pasta to street food and elegant regional dishes, it is easy to understand why Italian food remains one of the most influential and beloved cuisines in the world.

Easy Italian-Style Spaghetti with Cherry Tomatoes
After exploring some of Italy's great regional specialties, here's a simple dish you can prepare at home.
This quick spaghetti recipe combines cherry tomatoes, garlic, olive oil and chili peppers to create a flavorful pasta dish without complicated preparation.
Quick Spaghetti with Cherry Tomatoes
Preparation
Step 1 – Prepare the Pasta and Vegetables
Cook the spaghetti in a large pot of salted water according to the package directions.
Meanwhile, remove the stems from the cherry tomatoes and cut each tomato in half.
Remove the seeds from the green chili peppers and cut the peppers into small pieces. Roughly chop the garlic, keeping the pieces neither too large nor too finely minced.
Step 2 – Prepare the Tomato Sauce
Heat some olive oil and a piece of butter in a large skillet.
Add the chopped chili peppers, followed shortly by the garlic.
Cook gently until the garlic becomes fragrant, taking care not to burn it.
Add the halved cherry tomatoes and cook until they soften and begin releasing their juices.
Step 3 – Combine Everything
Drain the spaghetti, reserving a small amount of pasta water.
Transfer the spaghetti directly to the skillet and toss thoroughly with the tomato mixture.
If necessary, add a small splash of reserved pasta water to help the sauce coat the spaghetti.
Serve immediately while hot.
Simple, quick and full of Mediterranean flavor!
